Easy, Healthy, Flavorful Fish Bake

Happy New Year! Whether you’ve set a resolution or not, it’s always the perfect time to enjoy something healthy — and luckily, this dish is as delicious as it is good for you. The inspiration came from a few Bordeaux-style recipes I stumbled upon, but in the end, it was simply fresh fish, lemon, and good seasoning.

Normally, I test a recipe a few times before sharing, but this one was so simple I just went for it — and it was an instant hit! You really can’t go wrong with a flaky white fish and your favorite spices.
I was also thrilled to have my good friend Kels join from Kansas. She’s a pro at these fish bakes, so I knew I was in great hands. Even if it’s your first time making one, don’t worry — it’s truly easy. Once you get the hang of it, try experimenting with different types of fish and flavor combinations.

What I love most about a fish bake is how hands-off it is — just pop it in the oven, then use that time to prep your veggies (or pour yourself another glass of white wine).
Prep Time: 15-20 min
Cooking Time: 25-30 min
Serves 3-4
Ingredients:
- White fish (I chose cod)
- 2 tbsp unsalted butter
- 4 shallots
- 1 tsp ground black pepper
- ½ lemon, juiced
- 2 garlic cloves
- 1/3 cup white wine
- 1 cup of breadcrumbs (extra if you want)
- 2 tbsp Extra Virgin Olive Oil
- 2 tbsp fresh parsley
- 1 tsp salt
Directions:
- Sautee the shallots, garlic with butter for about 5 minutes. Then add the white wine. Cook until the wine is cooked down (evaporated).
- Add the chopped parsley, breadcrumbs, salt, pepper, lemon juice in a medium bowl. Add the onion and garlic mixture. Mix briefly.
- Drizzle half of your olive oil, then lay your fish down. Cover with the seasoning mix, top with olive oil.
- Bake for 25-30 minutes on 350°.
- Once finished baking, broil for 2 minutes for a slight crisp on top.
Enjoy with any veggie of your choosing!
