Gourmet Meal in Under 30 Minutes

When I first started cooking, I was so nervous I was going to mess something up or waste good money on a meal that I wouldn’t like. This was one of the first meals I made that made me realize cooking isn’t that hard. This recipe is incredibly easy and so good!

A couple tips would be to make sure you have enough olive oil on your pan for the veggies to cook in the oven and a single-serving size for 1 person should be 6-8 ounces. Have fun with changing out the veggies too. Enjoy!

Recipe

  • Pesto (enough to smother on top of both filets)
  • Cherry Tomatoes (1 1/2 cup for 2 people)
  • Asparagus
  • Salmon (2 6-8 oz. filets for 2 people)

Directions

  • Cut the cherry tomatoes in half
  • Cut the ends off the asparagus
  • Turn on oven to 375° F.
  • Cover tops of salmon with pesto.
  • Drizzle olive oil on baking sheet with large piece of foil.
  • Add salmon, veggies and cook for 15-20 minutes.
  • See! Easy. And you didn’t think you could do it. 🙂
