Sweet Corn Tamale Cakes

Sweet corn tamale cakes are the kind of appetizer that instantly sets the mood. They’re perfect for game nights, casual get-togethers, or even a cozy night in.

I first fell in love with these at a restaurant in my hometown that has since closed, but the memory of that first bite stuck with me for years. Eventually, I decided to recreate these sweet corn tamale cakes at home, and they’ve been a staple in my kitchen ever since. It’s one of those recipes you make once and keep coming back to.

Each bite is a balance of textures and flavors: naturally sweet corn blended with rich cream creates a soft, almost custardy center, while masa adds a subtle, toasty nuttiness that grounds the dish. Little pops of red pepper bring a gentle sweetness and a hint of brightness. Then come the toppings—the real flavor builders. Tangy salsa verde cuts through the richness, crema adds a smooth, cooling finish, and fresh pico de gallo brings a burst of acidity and freshness that ties everything together. It’s layered, vibrant, and completely satisfying.

All you need is a food processor, a pan, and a handful of simple ingredients to bring these together.

One of the best things about these tamale cakes is their versatility. They’re perfectly portioned for easy serving, whether you’re passing them around at a party or plating them up for a more intimate setting. Serve them warm straight from the pan or at room temperature. These bites will hold up perfectly either way.

Serving Size: 24-26 bite sizes

Ingredients:

  • 1 ½ frozen sweet corn
  • ½ cup heavy whipping cream
  • ½ cup unsalted butter, room temperature
  • 1 heaping cup of masa flour
  • ½ cup granulated sugar
  • 1 ½ tsp baking powder
  • ½ tsp kosher salt
  • 2 Tbsp water
  • 1 Tbsp flour
  • ½ green pepper finely chopped
  • ½ red pepper finely chopped

Directions

  • In a food processor, add 1 cup of frozen corn, 1 tablespoon of water and ½ cup of heavy whipping cream
  • Pulse until everything is mixed up
  • Set aside and in a medium bowl, add masa flour, sugar, baking powder, salt, and diced peppers. Mix up with a spoon.
  • Now add the room temp butter into food processor. Pulse until everything’s mixed up.
  • Spoon the food processor mixture into the bowl with your dry ingredients.
  • As the last step, add in 1 tablespoon of water, 1 tablespoon of flour, and ½ cup of whole frozen sweet corn. Mix with your hands. This should be the perfect consistency needed to fry.
  • Measure out 1 tablespoon-sized spoonfuls of sweet corn dough. 
  • Pour canola oil to fully cover your frying pan.
  • Turn the temp to medium and once the pan is warm, add your 1 Tbsp-sized balls of dough.
  • I find it’s best if you flatten them in the pan with a spatula. Then use a knife to scrape them off to fry. At this point I like to turn the temp down to slightly above low. I’ve learned “slow and steady wins the race” with this recipe. You don’t want to burn them but just evenly fry them.
  • After 3 minutes or so, flip them over until both sides are golden-browned. 
  • Transfer to a serving tray.
  • Repeat the process.

Top garnish, spoon salsa verde on top, then top with a crema (I used cilantro lime crema), and lastly top with pico de gallo. You’re ready to serve and enjoy!
