Ready to take your pasta game on an adventure? This post will hopefully spark a few ideas for being bold and creative in the kitchen. While I’m planning a full video on making homemade pasta from scratch (it’s a big one because I want to guide you through every step!), today is all about shaking things up with fresh and unexpected fillings.
I’ve made my fair share of ravioli over the years, but lately, I’ve been experimenting with a few flavor combinations that truly stand out. If you’re a seafood lover, you have to try shrimp with lemon juice and ricotta. It’s the kind of dish that whispers, “Dinner is being served on the yacht tonight.” Light, elegant, and when paired with buttered shrimp and a swirl of pesto — it’s pure perfection.

Another seafood pairing I’m obsessed with right now combines lemon juice, ricotta, and tangy goat cheese. The goat cheese brings a creamy richness that deepens the flavor and complements lighter fish beautifully. I love it with salmon, finished off with my favorite Herbs Special for Fish blend. I’ve also been venturing into the colorful side of pasta-making. Using natural dyes like beetroot powder, cocoa, and spinach, I’m experimenting with vibrant hues and playful patterns. My latest obsession? Trying to recreate a Burberry-style plaid on pasta. Yes, you read that right! Once an idea plants itself in my head, there’s no letting go until I see it through. So stay tuned, because this one’s definitely happening.

Ingredients/Directions
- Cheesecloth for draining moisture out of the ricotta cheese
- Roughly 1/2 cup ricotta cheese & 1/4 cup feta cheese mixed together.
- Lemon juice or half a lemon
- After leaving the ricotta cheese in the cheesecloth while tied somewhere it can hang, it will be ready after 2 hours.
- Just mix the cheeses and lemon to taste, then you’re ready to spoon into your ravioli.
- Keep at least 1/2 cup pasta water from boiling pasta.
- In a small bowl, add pesto to taste and a little pasta water to create a light sauce. Drizzle over ravioli and enjoy!
